Maybe you are one of those no mayo people or are just looking for another take on coleslaw to accompany sandwiches, salads and more. Look no further than this yummy Greek yogurt ‘slaw!
- 4 cups shredded cabbage
- 1 cup shredded carrots
- 1/2 cup thinly-sliced green onions
- 2/3 cup plain Greek yogurt
- 1 tbsp lemon juice
- 2 tbsp apple cider vinegar
- 2 tbsp honey, warmed
- 1 tsp dijon mustard
- 1/4 tsp celery salt
- Salt and pepper to taste
Combine vegetables (cabbage, carrot, green onions) in a large bowl.
In a separate bowl, whisk remaining ingredients together.
Pour whisked mixture over cabbage mixture and toss until evenly combined.
Serve or refrigerate immediately.
Try low-fat Greek yogurt for a lower fat version or spice it up with your hot sauce of choice.
