Complete with the extra little boost of protein from the yogurt, these fluffy muffins are the perfect mid morning snack!
- 2 1/4 cups flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 4 tbsp butter, softened
- 3/4 cup sugar
- 1/4 cup brown sugar
- 3 medium bananas, mashed (about 1 cup)
- 1 cup plain greek yogurt
- 2 eggs
- 1 1/2 tsp vanilla
Preheat the oven to 350.
Line a muffin tin with baking cups.
Whisk flour, baking soda, baking powder, and salt together in a medium bowl.
Cream together butter and sugars in a larger bowl.
Add mashed bananas, greek yogurt, eggs, and vanilla, to the larger bowl and mix well.
Add flour mixture to wet ingredients and mix until combined.
Pour a 1/4 cup of batter into each muffin cup.
Bake for 15-20 minutes until the tops are lightly golden.
Allow to cool and enjoy!
Try adding chocolate chips for a sweeter treat!
