Greek Yogurt Banana Muffins

Complete with the extra little boost of protein from the yogurt, these fluffy muffins are the perfect mid morning snack!

  • 2 1/4 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 4 tbsp butter, softened
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 3 medium bananas, mashed (about 1 cup)
  • 1 cup plain greek yogurt
  • 2 eggs
  • 1 1/2 tsp vanilla
  1. Preheat the oven to 350.

  2. Line a muffin tin with baking cups.

  3. Whisk flour, baking soda, baking powder, and salt together in a medium bowl.

  4. Cream together butter and sugars in a larger bowl. 

  5. Add mashed bananas, greek yogurt, eggs, and vanilla, to the larger bowl and mix well.

  6. Add flour mixture to wet ingredients and mix until combined.

  7. Pour a 1/4 cup of batter into each muffin cup.

  8. Bake for 15-20 minutes until the tops are lightly golden.

  9. Allow to cool and enjoy!

Try adding chocolate chips for a sweeter treat!
